As most of you may now (unless you don’t follow me on Instagram) I gained a quarantine 12. Which really pisses me off.
I was doing well with my Spin classes and healthy eating and when covid happened- I got depressed, stressed, and a lot of my healthy habits went to the wayside.
I decided to join WW, because it worked for me in the past, and it helps me be in control, and accountable for my actions. So far, so good- I just wish margaritas had zero points. Maybe on the next plan?
Ok, so another thing about me is- I hate to cook. I like my meals to be Easy, tasty, and ready-to-go. I like to concoct little recipes, and I never write them down so it’s hard to recreate them! I’m getting better at it though, and I’m sharing my Taco Soup here with you. It’s filling, easy to store, and feeeze, and it tastes SO GOOD.
Ingredients:
One pound chicken breast tenders
One can black beans, drained
One can kidney beans, drained
One can corn, drained
One can tomatoes with green chiles
2 boxes fat free low sodium chicken broth
Salt & pepper
Taco seasoning (about a tablespoon)
Garlic powder
Fresh limes
Basically- dump it all in a big pot, let it boil, then simmer for about 30 minutes. Season to taste. And stir every so often.
Remove chicken
and shred, then put back in the soup.

** TIPS- squeeze in the lime right before serving. Additional add-ons that i like: shredded cheese, sour cream, guacamole, Greek yogurt (instead of sour cream). Make it YOURS!!
